The COVID-19 health emergency has provided a stark reminder of the vital importance of keeping fit and well, further incentivising the pursuit of healthy lifestyles. With a third of adults planning to actively look after their physical health more once the outbreak is no longer a concern compared to before COVID-19, a stronger focus on health is set to be a lasting legacy of the crisis (Mintel).

Adults with a BMI of 35-40 were found to be 40% more likely to die from the virus than those with a healthy BMI, and those with a BMI more than 40 were 90% more likely to do so (Public Health). After over a year of working at home for some, it has allowed consumers to become more conscious of their health and wellbeing. Due to uncertain times, 59% of UK consumers have changed their diet in the past 5 years. Covid-19 has accelerated these changes, with 29% of consumers making changes since March 2020. Ingredients such as Turmeric are considered one of the healthiest spices used within cooking due to it’s anti-inflammatory and antioxidant properties. We use spices day-to-day and have a vast insight into how each ingredient can increase health benefits.

More consumers are seeking out ‘clean’ food labels than ever before, with 83% of the shoppers placing increased importance on the clarity of nutritional information on packaging, according to an IGD survey from 2020. Clean labels are those with a generally short ingredients list, made up of easily recognisable ingredients and free of artificial additives.Capture

Restrictions are being brought in effecting high in fat, salt and sugar (HFSS) foods. Their price, location in store and junk food advertising will be affected. Brands are launching healthier products and reformulating existing lines in a bid to stay below the threshold.

2021 Food Trends

World Cuisines

With restrictions on travel continuing, consumers are recreating well established world cuisines at home. Many of us are exploring further afield and taking our taste buds on a journey.

67% of people see world cuisine foods as a fun way to “travel through food” (Mintel). According to The Grocer, this trend is set to continue, with consumers continuing to make their gardens feel like the holiday destinations we are still unable to visit!

So, which world cuisines are popular? Through our inhouse benchmarking, we have seen an increased demand in Middle Eastern flavours. Earlier this year, Waitrose brought out their Levantine Table range which consisted of flavours of the Middle East. Strong, bold spices were used throughout products such as Slow-Cooked Baharat Chicken and Spicy Batata Harra Potatoes. We have also seen a rise in Middle-Eastern flavours within our development team and have successfully helped launch three products with rose petals.

Japanese products have proved very popular this year with flavours such as yakitori and tonkatsu. Katsu is still on trend and has been craved by many Brits! We have seen the Katsu name being used within different markets, from crisps and sauces to glazed chicken and potato wedges! BBC News have also caught onto this trend, explaining that staples, including soy sauce, sesame oil and miso, are widely available, and some other everyday condiments such as tomato ketchup, Worcestershire sauce and curry powder are surprisingly popular in Japanese cooking. With the Olympics taking place this summer we expect to see further Japanese flavours and blends on the market.

With the rise of the health-conscious consumer, we’ve also seen a big shift towards plant-based cooking during the pandemic. 53% of people that follow a plant-based diet do so because they don’t agree with eating meat and 47% say that they do so because a plant-based diet is healthier. Over the last 5 years, Kantar research found that plant-based categories have doubled in size from £300m in 2017, to £608m in 2021. This trend is set to continue with major brands and retailers offering vegan products.

Meal Kits

The uptake in cooking during the various lockdowns and restrictions has boosted the usage of cooking pastes, seasonings, and meal kits in particular (Mintel). HelloFresh reported yet another bumper quarter of growth in 2021, in which revenue more than doubled (Grocer, 2021). NPD & Marketing Technologist for Dalziel Ingredients noted, ‘We have seen a soar in meal kits within supermarkets specifically the ‘just add’ trend continuing to boom, making cooking easier for consumers. Retailers have really jumped on this trend, and I believe it’s set to continue. The pandemic has made consumers more willing to cook, but also supports consumers who do not have the time to make meals from scratch.’ Within the last year we have invested in the capability to sachet pack, enabling us to supply crumbs and sauces, ideal for a meal kit!

NPD & Marketing Technologist Appointment

New NPD & Marketing Technologist appointment at Dalziel Ingredients

Dalziel Ingredients has further expanded its NPD team with the appointment of Mary Niven as NPD & Marketing Technologist.

Mary joins the UK’s bespoke seasoning blends, cures and functional blends specialist having worked in NPD, marketing and sales roles in the food industry, most recently at The Original Baker.

She graduated in 2016 from Newcastle University with a degree in Food Marketing and Nutrition.

Mary’s new role sees her focus on new flavour concepts and helping brands tap into the next big food trends.

She said: “Dalziel Ingredients is known for its blue-sky innovation, keeping up with trends and exploring new ingredients. I can’t wait to get involved with each of these aspects of the job.

“And I’m looking forward to driving the social media side of the business to broaden our message to customers and suppliers.”

Her appointment takes Dalziel’s NPD team to 22 staff, advising food manufacturers across the world on flavour trends, market analysis, factory processes, recipe formulations and product quality enhancements.

National Account Manager Appointment for Ireland

Dalziel Ingredients welcomes new National Account Manager for Ireland

Dalziel Ingredients has appointed Keith Duffy as its new National Account Manager for Ireland, as the company expands its sales team outside the UK for the first time.

 

He brings over 14 years of business development experience in the food industry, including senior level sales roles at The Scobie and Junor Group and, latterly, at Fispack Ltd.

 

In his new role, Keith is tasked with driving Dalziel’s growth plans in Ireland, developing customer relationships to support food processors in their product development.

 

His appointment is a nod to Dalziel’s expanding customer base and commitment to customer service as the UK and Ireland specialist in bespoke seasoning blends, cures, functional ingredients and ambient sauces.

 

Taking up his new role based in Dublin, Keith said: “I am really excited to be part of the Dalziel team and to present Dalziel’s portfolio to the Irish market.

Group Health & Safety Appointment

Dalziel announces key Group Health & Safety appointment

Dalziel Ltd has named Peter Jenkins as Group Health & Safety Manager in charge of all health and safety practice across the company’s UK-wide operations.

 

Peter joins from UK convenience food manufacturer Greencore Group plc where he spent over three years at Greencore Leeds leading all SHE functions in a senior leadership team role and winning the British Frozen Food Federation’s Health and Safety Champion of the Year 2020.  Latterly, Peter led the site’s COVID-19 response.

 

Previously, he was primary H&S manager at London Hilton, Park Lane having gained a first-class honours degree in Environmental Health (highest mark in year group) at Northumbria University.

 

Then he gained a Postgraduate Diploma (distinction) in Occupational Health & Safety Management at Loughborough University.

 

In his new role, Peter will embed sustainable health and safety strategic direction, facilitating the health and safety performance of Dalziel’s 800 staff across all Dalziel’s 14 sites nationwide.

 

Commenting on his new role, Peter said: “Dalziel is an exceptionally exciting, and successful organisation. Celebrating its 95th birthday this year, Dalziel has a wealth of history, building its business through strong connections with customers and suppliers.  And it constantly champions its attitudes toward growth and enhancement.

 

“These values and attributes align perfectly with my own, and I am thrilled to be appointed in supporting Dalziel to define and deliver its health and safety agenda over the coming years.”

 

Recently, Peter was appointed as a member of the Institute for Occupational Safety and Health’s (IOSH) Future Leaders Steering Committee 2021-2023, starting June 2021. This committee will be instrumental in supporting the growth of new and emergent professionals in the health and safety profession.

Group Compliance appointment reflects Dalziel’s food safety promise

Dalziel Ltd has announced the appointment of David Brown as Group Compliance Co-ordinator, underlining the company’s commitment to excellence in food safety standards.

 

As a newly created role, David will be responsible for quality governance across Dalziel’s 14 UK-wide depots, ensuring all processes meet the highest standards of food safety and health and safety compliance.

 

He brings a background of over 15 years in risk management and manufacturing, the last four years as quality controller for global supplier Ferschl Hose & Hydraulics.

 

Reporting to Dalziel’s Group Technical Manager, David will be responsible for ensuring the tightest quality compliance with food safety regulations across all Dalziel’s operations.

 

“We aim to set the highest global standards in the quality of our food products supplied to customers.  That means they can be 100 per cent confident in our production methods, food safety and supply chain management.

 

“Food safety and compliance was already complex, even before Covid-19.  And as we continue to grow across more and more sectors in the food industry, David’s role will be critical in meeting and exceeding expectations of ever-increasing regulatory standards.”

Six new appointments strengthen expansion at Dalziel Ingredients

Dalziel Ingredients has announced six appointments, amid heightened demand for its bespoke seasoning blends, cures, functional ingredients and ambient sauces.

 

It’s expanding NPD and Technical team sees four new appointments, alongside new roles in Dalziel’s Quality Control and HR departments.

 

Katie Richmond (pictured) joins as NPD Technologist having graduated this year with a first-class honours degree in food science and nutrition from Northumbria University after a one-year placement with Dalziel.

 

Christine Smith becomes NPD Assistant, analysing product requirements and developing sample concepts and flavours to meet increased demand for samples.

 

Christina George takes up a placement from Teesside University where she is studying a Master’s degree in Food Science and Biotechnology.  Part of her placement will see her focus on snack production and development.

 

Whilst Lewis Johnson joins as an apprentice working in Technical service.

 

Elsewhere at Dalziel Ingredients, Josh Upson is appointed as Quality Technologist and Charlotte Oxley joins as HR and Training Co-ordinator.  Latterly she worked for the NHS whilst completing her CIPD qualifications.

 

These latest appointments take Dalziel’s NPD and Technical team to 29 staff advising food manufacturers across the world on flavour trends, market analysis, factory processes, recipe formulations and product quality enhancements.

Growth drives new sales appointment at Dalziel Ingredients

Continued growth has seen Dalziel Ingredients further expand its sales team with the appointment of John Camus as Technical Sales Account Manager.

His move is a nod to Dalziel’s expanding customer base and commitment to customer service as the UK specialist in bespoke seasoning blends, cures and functional ingredients.

John takes up his new sales role after an NPD background as ingredient technologist at Dalziel’s Felling, Gateshead new product development centre.

He brings five years of knowledge and experience of the ingredients used in Dalziel’s blends, the processes used both within its own blending facilities and at various manufacturing sites around the UK.

Previously, John worked as a butcher at WM Morrison Supermarkets plc whilst studying a degree in food science at Northumbria University.

He said: “Our customers’ projects can have tight deadlines, so having an NPD background and insight of the science behind the products we develop gives me a heads up on customer requirements.

“It helps to get samples right first time, so our customers can get their projects signed off within often demanding timescales.

“Introducing new products and working with customers to problem solve is something I can’t wait to do.”

Richard Wilson, Dalziel Ingredients’ sales director, added: “As we work across more and more sectors within the food industry, our aim is to ensure we continue to offer the unrivalled customer service, account management, technical and NPD support that our success and growth is built on.”
